Windows 32 Bit (NOTE: this includes both 32bit & 64bit, just determines starting install mode) I did NOT use the manifests page under the depots pages and instead used the history as it was more accurate & had a longer retention (although what a pain loading & scrolling, the page was 8MB fully loaded). I've done this only for public branch releases (not experimental versions). So I've taken that information and compiled a list of the details necessary to download almost every past version of 7 Days To Die released to Steam. The summary of that thread is that as long as you own a game and the game's depots are all still available, it is possible to find the correct information and download any version of the game you want that has been released on Steam.
